Our berry nice Christmas lamington wreath!

Our Ingredients

  • 18 lamington fingers
  • 300ml thickened cream
  • 2 tablespoons icing sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons strawberry jam
  • 1 packet dark chocolate mint thins
  • Fresh berries — blueberries, blackberries, strawberries, and raspberries
  • Fresh mint leaves, to garnish

Directions

Whip the cream: In a mixing bowl, beat the cream, icing sugar, and vanilla until stiff peaks form.

Assemble the wreath: On a large white plate, arrange your lamington fingers in a circle to form a wreath shape. Pipe or spoon the whipped cream between each lamington.

Add the finishing touches: Drizzle the strawberry jam over the top, then decorate with fresh berries as desired.

Garnish and serve: Tuck in the chocolate mint thins and scatter mint leaves for a festive finish. Serve immediately or keep chilled until ready to enjoy.
