This is a simple recipe, so choose ingredients that are fresh and bursting with colour. Bocconcini comes in a 220g supermarket tub; they are small, round balls of cheese. Slice the tomatoes about 1 cm thick. Top each slice with a basil leaf and gently squash a bocconcini ball on top. Arrange your appetizers on a plate, drizzle lightly with olive oil, decorate as you like, and serve.
